Classic Vegan Crème Brûlée Recipe by Earthy Cookhouse

Chef Aashti's recipe for her favorite dessert requires a little precision, some quality ingredients, and a whole lot of plant-based goodness. Who knew gourmet indulgence could be this easy?

Ingredients:
 

1 ½ cups unsweetened Borges Natura Rice & Almond Drink 

½ cup oat condensed milk or full-fat coconut milk 

¼ cup sugar if using full-fat coconut milk 

2 tablespoon potato starch 

1 tablespoon cornstarch 

½ teaspoon agar powder 

1 tablespoon vanilla extract 

1 tablespoon vegan butter 

4-5 tablespoons light brown sugar or white sugar 



 

Cooking Instructions: 

 

For the pudding: 
 

Step 1. To a medium saucepan, add the almond milk, condensed milk, sugar if using coconut cream, potato starch, cornstarch, agar agar, and vanilla extract. 

Step 2. Whisk until the starches are fully combined with the milk and start heating it slowly.

Step 3. Once the mixture starts to simmer, add in the vegan butter and whisk until the milk has thickened and looks like a custard. 
Step 4. Immediately pour it into bowls and let them cool at room temperature for about 30 mins. 

Step 5. Refrigerate for at least 6 hours. 


For the crispy caramel layer: 

Step 1. Sprinkle white sugar on top of the pudding. Spread it evenly using your fingers. 

Step 2. Hold the torch 3 inches away from the bowl to prevent the sugar from burning. 
Step 3. Rotate the bowl as you torch the sugar to caramelize it evenly. First, the sugar will melt and bubble, then it will turn into a glossy golden brown layer. 

Step 4. Let the caramel harden for a couple of minutes and serve immediately. 

Step 5. Use the edge of the spoon to crack it open and dig in!
