Instant Vegan Ragi Mug Cake Recipe using Sofit Almond Chocolate flavoured drink

Cakes aren’t normally associated with ‘healthy’ but Chef Keertida’s recipe for Ragi Mug Cake will deliver all the satisfaction of eating a cake but with the goodness of high-protein and high-fibre millet, ragi, replacing maida as the main ingredient.

Ingredients:

¼ cup Soya Almond Chocolate flavoured drink

¼ cup + 2 Tbsp/ 60 gm Ragi flour

2 tsp cornstarch

2 Tbsp cocoa powder 

¼ tsp baking powder

¼ tsp baking soda

Scant ¼ tsp salt 

5 Tbsp jaggery

2 Tbsp instant coffee

3 Tbsps coconut oil

1 tsp Apple cider vinegar

¼ tsp vanilla extract

Cooking instructions:

Step 1. Preheat the oven to 170 degrees celsius 

Step 2. In a dry bowl, sift together the Ragi flour, cornstarch, cocoa powder, baking powder, baking soda and a tiny bit of salt.

Step 3. In a separate bowl, whisk together jaggery, instant coffee, Sofit Almond Chocolate flavoured drink, coconut oil, Apple cider vinegar, and vanilla extract.

Step 4. Once the jaggery has dissolved, fold in the dry ingredients. 

Step 5. Transfer to 2 mugs of 200 ml

Step 6. Bake for 15-18 mins at 170 degree Celsius.

Dig in while it’s warm and fresh out of the oven!
